A few weeks ago, I was looking for an easy but impressive breakfast for Sean’s birthday. He had asked for french toast, which is something I neither make often nor especially well. There are endless variations and every family makes french toast differently, so I took a ride on the Google express. With a 7-year old and a baby underfoot, I wanted something I could easily prepare the night before, stick in the fridge overnight, and then pop into the oven the next morning…

I came across several recipes that featured thick, luscious slices of brioche bread that are soaked in a sumptuous egg custard overnight…but also read about casseroles that looked lovely, golden and toasty on top, but sadly, ended up soggy and eggy underneath. I almost gave up looking, when I found the blog Black Girls Who Brunch and this recipe for French Toast Casserole. It’s one of the easiest things you can make. You cut up an entire loaf of brioche bread into cubes, place them inside a baking dish, pour the creamy egg mixture on top, put it in the fridge overnight, make a quick brown sugar topping the next morning, sprinkle it on top and pop the whole into the oven. I slid a tray of bacon underneath and after 25 minutes, I was cutting into thick, fluffy squares of french toast and plating them up with crispy bacon, a side of cool blueberries, and warm maple syrup. Just make this and save yourself standing over a hot stove on Christmas morning!
